Ingredients
- 1 bag fingerling potatoes – boiled (20 minutes) and cooled
- 2 red bell peppers – quartered
- Dressing:
- 2 Tbsp oregano
- 2 tsp parsley
- 2 tsp mustard
- 2 tsp thyme
- 1/2 lemon juiced
- 1 Tbsp red wine vinegar
- 2 Tbsp olive oil
- 1 Tbsp garlic oil
Instructions
- Boil potatoes until tender (20 minutes)
- Cool potatoes (45 minutes)
- Prepare dressing
- Quarter red pepper
- Grill peppers and potatoes on high until evenly charred
- Halve the potatoes and slice peppers into forkfuls
- Pour dressing over hot peppers and potatoes
- Serve

- Marinade breast for 2-3 hours
