Jalapeno-Cilantro Coleslaw

Quick and simple coleslaw with a kick. It’s particularly tasty with smoked meat.

Ingredients

  • 1/4 Large White Onion, Finely Minced
  • 1/2 Head Purple Cabbage, Shredded
  • 1-2 Large Carrots, Peeled/Julienned
  • 1/2 Jalepeno, Finely Minced

For the Dressing:

  • 2 Tbsp Dijon Mustard
  • 2 Tbsp Apple Cider Vinegar
  • 1 Tbsp Cilantro, finely diced
  • 1 tsp salt
  • 2 Tbsp Mayo

Instructions

  1. Place the onion and vinegar so that the onions are mostly covered, set aside for 5 minutes
  2. Mix together dressing ingredients, set aside
  3. Add all ingredients to a large bowl and mix
  4. Let rest in fridge for a few hours, up to a day, before serving
