Quick and simple coleslaw with a kick. It’s particularly tasty with smoked meat.
Ingredients
- 1/4 Large White Onion, Finely Minced
- 1/2 Head Purple Cabbage, Shredded
- 1-2 Large Carrots, Peeled/Julienned
- 1/2 Jalepeno, Finely Minced
For the Dressing:
- 2 Tbsp Dijon Mustard
- 2 Tbsp Apple Cider Vinegar
- 1 Tbsp Cilantro, finely diced
- 1 tsp salt
- 2 Tbsp Mayo
Instructions
- Place the onion and vinegar so that the onions are mostly covered, set aside for 5 minutes
- Mix together dressing ingredients, set aside
- Add all ingredients to a large bowl and mix
- Let rest in fridge for a few hours, up to a day, before serving
